Shredded Coconut

Dessert doesn’t have to always be rich and caloric to be flavorful. With an abundance of coconut and papaya on the island, this is an easy, affordable treat.

INGREDIENTS

  • 1 Fresh coconut
  • cInnamon, to taste
  • 1 Fresh papaya, sliced or cubed
  • 2 tbsp sugar

PREPARATION

Chop open the coconut with a large knife. Pout out the milk and set aside. Shred the coconutflesh into a bowl. Top with cinnamon to taste and papaya, and drizzle with the coconutmilk. Add a dash of sugar for additional sweetness.
